Honey Glazed Carrots

With these honey and ginger glazed carrots, perhaps the most underrated vegetable in the kitchen suddenly becomes inviting and fragrant, capable of stealing the spotlight from any main dish. A quick and clever recipe, designed for when you have little time but don’t want to give up on something really good. A perfect mix of sweetness and freshness that even wins over those who, like me, always claim they don’t like cooked carrots. And now go to the recipe because these carrots won’t glaze themselves.

Ingredients for Honey Glazed Carrots

In this recipe, you can use fresh grated ginger or powdered ginger. Of course, you can dose it to taste according to personal preference. I added a full tablespoon because I love it and enjoy the slightly spicy flavor it gives to the dish.

  • 1.1 lbs carrots (net weight after peeling)
  • 1 tablespoon honey (generous)
  • 1 teaspoon fresh ginger (grated)
  • 1 pat butter
  • lemon juice (a splash)
  • 1 sprig parsley
  • salt
  • black pepper

Preparation of Honey Glazed Carrots

  • Trim the carrots, scrape them, wash them, and cut them into not too thin slices. 

  • Then, plunge them into boiling salted water and cook them for 5 minutes from the resumption of boiling, then drain them with a slotted spoon. If you prefer softer carrots, you can extend the cooking by 1-2 minutes, but no more because with the subsequent step in the pan, you may risk mashing them.

  • In a pan, heat a couple of tablespoons of oil with a pat of butter. When the butter has melted, add the carrots and sauté them over medium heat for a couple of minutes. 

  • Then, add a generous tablespoon of honey, some grated ginger, a generous pinch of salt, and a generous grind of black pepper. Also add a splash of lemon juice which will help to counteract the sweetness of the dish. Stir gently and continue cooking for a few minutes.

  • Finally, scent the honey-glazed carrots with chopped parsley. Serve them warm or at room temperature. Enjoy! Paola
