Mascarpone Delight

Why did I name this cake ‘Mascarpone Delight’? Simply because I couldn’t think of a more fitting name. A truly exquisite cake, very soft, very moist, and enriched with fluffy dollops of mascarpone that make it irresistible. You could even consider serving it cut into squares, turning them into real pastries. In short, I don’t think I need to insist further to convince you to try it!

Ingredients for the Mascarpone Delight

  • 1/2 cup all-purpose flour
  • 1/3 cup sugar
  • 2 eggs (medium)
  • 3.5 oz dark chocolate
  • 3.5 oz butter
  • 9 oz mascarpone
  • 2 tbsp milk
  • 1 packet baking powder (16 g)
  • unsweetened cocoa powder (for dusting)

  • 1 Bowl large
  • Electric beaters
  • Sieve fine mesh
  • Baking pan square, 9 inches

Preparation of the Mascarpone Delight

  • Chop the chocolate into pieces, place it in a small bowl with the butter (also in pieces) and melt everything in a double boiler or microwave. If you choose the latter, as I did, proceed in 20-second intervals, stirring each time until a shiny and smooth cream is obtained. Once melted, let it cool.

  • Place the eggs in another bowl with the sugar and beat well with electric beaters until the mixture is fluffy and pale.

  • Then add the cooled melted chocolate and continue to mix with the electric beaters.

  • Mix the flour with the baking powder then gradually sift them into the bowl and incorporate with a spatula.

  • Finally, add 3.5 oz of mascarpone and two tablespoons of milk and mix everything very well until the lumps of mascarpone have dissolved (you can use the electric beaters again, if you prefer). 

  • At this point, pour the mixture into a square 9-inch baking pan previously lined with parchment paper or buttered and floured, and level it. If you prefer to use a round pan, a 9-inch diameter one is fine. 

  • And now the final touch! Place the remaining mascarpone in small dollops on top of the chocolate mixture.

  • Bake the mascarpone delight in a preheated static oven at 340°F for about 30 minutes. During baking, the mascarpone will sink into the mixture creating delicious white spots at the base of the cake.

  • Remove the mascarpone delight from the oven and let it cool completely before transferring it to a serving plate. Dust the surface with some unsweetened cocoa powder and serve in slices or squares. Enjoy! Paola
