Mother-in-law’s Cake

I think there is no simpler cake, and at the same time, softer and more delicate than the one I’m about to present to you. It’s the mother-in-law’s cake. Have you ever heard of it? You will fall in love with it. The origins of this cake are not very clear, but it seems it was created out of necessity to quickly prepare something good to offer to the husband’s mother who showed up at the house with very short notice. Indeed, these mothers-in-law were really scary and were often made fun of a bit. Just think of the mother-in-law tongues so-called to remind us how gossipy and talkative they were. But let’s get back to our cake! You absolutely have to make it because it’s amazing. Great from breakfast to after-dinner, through lunch. Trust me!

Ingredients for the mother-in-law’s cake

  • 1 cup all-purpose flour
  • 1/2 cup potato starch
  • 1/2 cup sugar
  • 3 eggs (medium)
  • 3/4 cup fresh liquid cream
  • 1 packet vanillin
  • 1 packet baking powder
  • 1 pinch salt

Tools

  • 1 Bowl
  • Electric whisk
  • 1 Small bowl
  • Sieve fine mesh
  • 1 Spatula
  • 1 Springform pan 8 inches in diameter

Preparation of the mother-in-law’s cake

  • In a bowl, place the sugar and eggs and beat with the electric whisk for a long time until the mixture is light and frothy.

  • Then add the cream and whisk again.

  • In a small bowl, mix the flour, potato starch, baking powder, a packet of vanillin, and a pinch of salt.

  • Add this mixture to the egg and cream mixture by sifting it through a fine mesh sieve and incorporate it by stirring with a spatula.

  • Finally, pour the obtained mixture into a springform pan 8 inches in diameter previously lined with parchment paper.

  • Bake the mother-in-law’s cake in a static preheated oven at 340°F for 40 minutes. Do the toothpick test to verify its actual baking: inserted in the center of the batter it should come out dry. Otherwise, extend the baking time by a few more minutes.

    Remove from the oven and let it cool completely before transferring it to the serving plate, decorating it as desired with powdered sugar. Enjoy! Paola
