Mother-in-law’s Chocolate Cake

After the huge success of the mother-in-law’s cake both with family and on all my social channels, I decided to try my personal chocolate version. The result is an equally amazing dessert, super soft, perfectly moist, and very delicious. In short, the mother-in-law’s chocolate cake has also passed with flying colors. I suggest you try both so you can tell me which one is your favorite.

  • Cost: Cheap
  • Preparation time: 15 Minutes
  • Portions: 6/8 people
  • Cooking methods: Oven
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients for the mother-in-law’s chocolate cake

  • 3/4 cup all-purpose flour
  • 1/2 cup potato starch
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 oz dark chocolate
  • 3 eggs (medium)
  • 1/2 cup sugar
  • 3/4 cup heavy cream
  • 1 pinch salt
  • 1 pack vanillin
  • 1 pack baking powder
  • unsweetened cocoa powder
  • powdered sugar

Tools

  • 1 Knife
  • 1 Bowl
  • Electric Whisk
  • 1 Bowl small
  • Colander fine mesh
  • 1 Cake Pan springform, 8 inches in diameter

Preparation of the mother-in-law’s chocolate cake

  • Chop the dark chocolate into small flakes with a knife and set aside.

  • Pour the sugar into a large bowl, add the eggs, and whisk for a long time with the electric whisk until the mixture is light and frothy.

  • Then add the cream and whisk again.

  • In a small bowl, mix the flour, potato starch, cocoa powder, baking powder, vanillin, and a pinch of salt.

  • Gradually add this mixture to the egg and cream mixture by sifting it through a fine mesh colander and incorporating it with a spatula.

  • Finally, mix in the chocolate flakes as well.

  • At this point, pour the batter into an 8-inch springform pan previously lined with parchment paper and level it with a spatula.

  • Bake the mother-in-law’s chocolate cake in a preheated static oven at 340°F for 40 minutes. Do the toothpick test to check its actual cooking: when inserted into the center of the cake, it should come out dry. If not, extend the cooking for a few more minutes.

  • Remove the mother-in-law’s chocolate cake from the oven and let it cool completely before removing it from the mold and transferring it to a serving plate.

Once cold, sprinkle it with a mixture of unsweetened cocoa powder and powdered sugar. Alternatively, you can also use just cocoa powder or just powdered sugar. Enjoy! Paola
