The pasta with cream cheese and curry I’m about to describe is a tasty first course and really quick to prepare; one of those that saves us when we come home late from work and have a few minutes to “invent” something to serve. The sauce is prepared while the pasta cooks. Not bad, right? Few, simple ingredients for a simple but different dish from the usual.
Here are other first course ideas where everything is prepared while the pasta cooks:

Ingredients for pasta with cream cheese and curry
- 12 oz pasta (any shape you like)
- cup milk
- 7 oz cream cheese
- 1 teaspoon curry
- 1.75 oz walnut kernels
- salt
- black pepper
Tools
- 1 Saucepan
- 1 Pot
Preparation of pasta with cream cheese and curry
In a large saucepan, place the milk and the cream cheese.
Bring to the stove and let it melt over low heat, stirring continuously and mashing it with the back of a wooden spoon.
Then add the curry and a generous pinch of salt. The amount of curry depends on personal taste. I added a good teaspoon.
Meanwhile, cook the pasta in plenty of boiling salted water and coarsely chop the walnut kernels with a knife.
Drain the pasta al dente, saving some cooking water (it might be needed to soften the sauce) and transfer it to the saucepan with the sauce.
Mix well to combine all the ingredients. At this point, if necessary, dilute the sauce with a few tablespoons of the reserved cooking water.
Finally, add the chopped walnuts (again, you can increase or decrease the amount based on your personal taste).
A final stir and we are ready to serve the pasta with cream cheese and curry on individual plates. Sprinkle with freshly ground black pepper and serve it hot. Enjoy! Paola
