The pasta with peas and ham I’m about to present is an ideal main course for a regular workday because it’s easy and quick to prepare. However, this doesn’t mean it isn’t tasty. Quite the opposite! Few ingredients, a delicate flavor, and a thumbs-up result!

Ingredients for Pasta with Peas and Ham
- 12.7 oz short pasta (any shape)
- 2 shallots
- 2.5 oz cured ham (in a single slice)
- 8.8 oz frozen peas
- 1 packet saffron
- 1 bunch parsley
- Grana Padano cheese (or Parmesan)
- extra virgin olive oil
- salt
- black pepper

Preparation of Pasta with Peas and Ham
Peel the shallots and chop them finely. I used a manual pull chopper which I find really convenient. If you want to buy it, you can find it by clicking HERE.
Remove the fatty parts from the cured ham and cut it into cubes (and I forgot the photo of the cubes).
In a large pan, heat a few tablespoons of oil and sauté the shallots. Let them sizzle for a moment, then add the ham cubes and frozen peas.
Let it flavor for a couple of minutes over medium heat, then salt to taste, lower the heat, and continue cooking for 5-6 minutes, stirring often. If the sauce dries out too much, soften it with a few tablespoons of pasta water.
Meanwhile, bring plenty of salted water to a boil in a pot and add the saffron.
When the water boils, toss in the pasta and cook it for the time indicated on the package. Drain it al dente without draining too much and transfer it immediately to the pan with the sauce. Stir to mix all the ingredients well and let it flavor for a minute.
Distribute the pasta with peas and ham on individual plates, sprinkle it with freshly ground black pepper, finely chopped parsley, and grated cheese. Serve immediately, piping hot. Enjoy! Paola
