“What should I cook?” Here’s the eternal question. And here is my suggestion that can come to your rescue today: pasta with shrimp and zucchini. It’s definitely worth trying because it’s delicious. Its delicate taste conquers everyone, including children. Moreover, it is extremely simple. A rather rich first course that can almost be considered a one-dish meal.

Ingredients for Pasta with Shrimp and Zucchini
In this recipe, I used frozen and already cleaned shrimp tails. If you use fresh shrimp, clean them by cutting into the shell to remove the black vein.
- 12 oz short pasta (any shape you like)
- 1.1 lbs shrimp tails
- 4.4 cups zucchini (net weight)
- 1 clove garlic
- 1 shot glass brandy
- chili pepper
- extra virgin olive oil
- salt
- black pepper

- 1 Colander
Preparation of Pasta with Shrimp and Zucchini
Trim the zucchini, wash them, and cut them into cubes. I recommend cutting them first into logs, then into slices, then into sticks from which you will easily obtain the cubes.
In a large pan, heat a few tablespoons of oil and sauté the finely chopped garlic clove and a pinch of chili pepper to taste depending on personal preference.
Let it sizzle for a moment, then add the zucchini and brown them for a couple of minutes over high heat.
Then add the shrimp and, after a quick stir, deglaze with a shot glass of brandy and let it evaporate.
Lower the heat, season with salt, and cook for 7-8 minutes, stirring occasionally. Scent with a grind of black pepper and chopped parsley.
At this point, in a corner of the pan, separate some of the zucchini and blend them with an immersion blender. Then mix the cream with the rest of the ingredients, cooking for another minute. Adjust the salt, if necessary.
Meanwhile, cook the pasta in plenty of boiling salted water. Drain it al dente and transfer it directly into the pan with the sauce. Let everything flavor by stirring to mix the ingredients well.
Distribute the pasta with shrimp and zucchini on individual plates, sprinkle it with more freshly ground black pepper, with some parsley, and serve immediately while hot. Enjoy! Paola.
