Pear Saltimbocca

If you’re looking for a tasty idea for an original appetizer, I assure you that these pear saltimbocca will not disappoint. They are perfect during the holiday season when everyone is looking for something unusual to offer to guests. Moreover, they are also very easy to prepare. The downside is that they cannot be made well in advance because there’s the risk that the pear will brown. However, if you want, you can prepare the various ingredients, including the pear immersed in lemon water, and “assemble” everything about half an hour before the guests arrive.

Ingredients for Pear Saltimbocca

Use a pear that is not too ripe but still crunchy.

With one pear you will prepare 12 saltimbocca.

As you can see, I have not indicated the quantity of the ingredients because they can be measured by eye; by reading the recipe, you will understand why.

  • 1 Kaiser pear
  • A few slices prosciutto
  • A few leaves arugula
  • sweet gorgonzola
  • honey
  • black pepper

  • 1 Bowl
  • 1 Tray

Pear Saltimbocca Preparation

  • Wash the pear, cut it in half and remove the stem and core without peeling it.

    Then obtain six wedges from each half.

  • Dip them one by one into a bowl filled with water acidulated with the juice of half a lemon. 

  • Cut the slices of prosciutto into long, narrow strips. 

  • Remove a few pear wedges from the water at a time and pat them dry with kitchen paper without rinsing them.

    Make a cut at the tip of each wedge to create a sort of cavity. Eat the part you remove.

  • Place a leaf of arugula on each pear slice and wrap a strip of prosciutto around it. 

  • Then distribute a bit of sweet gorgonzola on top, preferably creamy. 

  • Gradually place the saltimbocca on a tray and when they’re all ready, sprinkle them with freshly ground black pepper. Finally, drizzle honey on top. I used ginger honey which was wonderful. It’s not easy to find, so feel free to use any type of honey you have at home.

  • Place the pear saltimbocca on a serving plate and serve them cold or at room temperature. Enjoy! Paola
