Penne with Mustache

If you are looking for a quick, creamy (even super creamy) and good (even super good) main course, I assure you that you have it in front of you (or rather below). These are the Penne with Mustache, a classic of homemade cuisine, capable of pleasing everyone. I’ve never prepared them and someone has asked for an alternative sauce. They are born from the meeting of a few simple ingredients (cream, tomato, and cooked ham) that together create a soft and enveloping sauce that is really very tasty. After all, they are called this because after the first taste… “you lick your mustache”! Another aspect not to be underestimated is that they are perfect when you have little time because the sauce is prepared on the fly while the pasta is cooking. In short… speed, comfort, and a flavor that delights with every bite. I’ve heard they can be personalized with the addition of spices, herbs, or a touch of chili, but I find them amazing just like that.

  • Cooking methods: Boiling, Stovetop
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients for Penne with Mustache

  • 12 oz penne rigate
  • 7 oz heavy cream
  • 7 oz tomato purée
  • 3.5 oz cooked ham (thinly sliced)
  • Half yellow onion
  • 1 bunch parsley
  • extra virgin olive oil
  • salt

Tools

  • 1 Pot
  • 1 Pan
  • 1 Colander

Preparation of Penne with Mustache

  • Since the sauce in this recipe is prepared while the pasta cooks, the first thing to do is to put a pot of salted water on the stove. When it boils, add the penne and cook them al dente.

  • In the meantime, cut the cooked ham into strips.

  • In a large pan, heat a few tablespoons of oil and sauté the finely chopped onion. Let it sizzle for a moment, then add the strips of cooked ham and brown them just for a minute.

  • At this point, add the cream and the tomato purée. Salt to taste and mix carefully to perfectly blend all the ingredients (and here I forgot to take the photo).

  • When the penne are cooked, drain them and transfer them directly into the pan with the sauce. Stir well until they are completely coated with the sauce.

  • Distribute the Penne with Mustache on individual plates, flavor them with chopped parsley, and serve them immediately, piping hot. Enjoy! Paola.
