I love making drinks at home by mixing fruits and various flavors. Besides them always being delicious, what I like the most is knowing exactly what’s in them. What I’m proposing today is a pineapple and grapefruit drink to which rosemary adds a delicate aromatic note. This combination never would have come to my mind if I hadn’t seen a drink made by Davide Zambelli, a blogger I personally adore. Based on his idea and using almost the same ingredients, I made a slightly different drink that gave me great satisfaction. It’s very pleasant, easy, and perfect for hot summer days, but I already know I’ll make it in winter too, as all the necessary ingredients are also available during the cold season. Let’s go see how it’s done!

Ingredients for the Pineapple and Grapefruit Drink
- 14.1 oz pineapple (weight without peel)
- 2 pink grapefruits
- 1/3 cup brown sugar
- 2 sprigs rosemary
- 4 1/4 cups still water
- 3/4 cup tonic water
- ice

- 1 Saucepan
- 1 Citrus juicer
- 1 Blender
- 1 Pitcher
Preparation of the Pineapple and Grapefruit Drink
Remove the skin from the pineapple slices and cut them into pieces.
Then place them in a saucepan and add the brown sugar, rosemary sprigs, 3/4 cup of water, and the juice of the two pink grapefruits.
Bring to heat, cover, and boil for about half an hour, stirring occasionally.
At the end of cooking, turn off the heat and let it cool.
Remove the rosemary sprigs, transfer everything into a blender jar, and blend in batches until you obtain a rather thick but smooth and homogeneous liquid.
Pour it into a pitcher and dilute it by adding the remaining water (3 1/2 cups) and 3/4 cup of well-chilled tonic water. Mix well and refrigerate for a few hours.
When ready to serve, pour the pineapple and grapefruit drink into individual glasses, add some ice cubes, and garnish with a sprig of rosemary. Serve always chilled. Enjoy! Paola.
