Pineapple with Amaretto

Ingredients for Pineapple with Amaretto

  • 12 oz fresh pineapple (net weight after discarding)
  • 3.4 fl oz Amaretto liqueur
  • 1/4 cup brown sugar
  • 1.7 fl oz water
  • A few Amaretti cookies

Preparation of Pineapple with Amaretto

  • Cut the pineapple into not too small pieces. You will need 12 oz of fruit net of waste. Remember not to throw away the pineapple peel but use it to prepare a delicious drink (find the recipe by clicking HERE).

  • In a pan, place the brown sugar and water, then transfer to the heat and warm everything over medium flame. 

  • When the sugar has dissolved perfectly, pour the Amaretto liqueur into the pan and add the pineapple pieces. 

  • Cook until the liquid has thickened, stirring gently from time to time and turning the pineapple slices on all sides. It will take about 15 to 20 minutes.

  • Once cooked, arrange the pineapple slices on a serving plate or individual plates, pour some of the cooking liquid over them, and sprinkle them with some crumbled Amaretti cookies. 

  • The pineapple with Amaretto is delicious whether warm, at room temperature, or even cold. Enjoy! Paola
