Preparation of Pork Loin Slices with Tomato
Lightly pound the pork loin slices with a meat tenderizer to slightly thin them out, then make a couple of small cuts on the edges to prevent them from curling during cooking.
Then dust them with flour and shake off the excess.
Wash the parsley leaves and chop them together with the peeled garlic clove, removing its central part.
Chop the Taggiasca olives together with the capers.
In a large skillet, heat the butter and oil before laying the escalopes in a single layer.
Cook them for a minute, then turn them over with tongs and cook for another minute on the other side.
Then drizzle them with white wine and let it evaporate over high heat for a couple of minutes.
Season the meat slices with a pinch of salt, then pour the tomato puree, chopped olives and capers, and the parsley and garlic mixture into the skillet.
Scent with a generous pinch of oregano and season with another pinch of salt. Also add a couple of tablespoons of milk: these will help to reduce the acidity of the tomato.
Continue cooking over medium-low heat for another 7/8 minutes.
Finally, transfer the pork loin slices with tomato to the serving platter and serve immediately, piping hot. Enjoy! Paola
