Pork Loin Slices with Tomato

These pork loin slices with tomato are really so, so tasty. A soft and enveloping sauce made of tomato puree, olives, and capers makes them a perfect dish for mopping up with bread. They are ideal for a family lunch and are very simple to prepare. You really have to try them!

Ingredients for Pork Loin Slices with Tomato

  • 1.3 lbs pork loin (sliced)
  • flour
  • 1 bunch parsley
  • 1 clove garlic
  • 1.75 oz Taggiasca olives
  • 1 tbsp capers
  • 1.7 fl oz dry white wine
  • 8.8 oz tomato puree
  • 3 tbsp milk
  • 0.7 oz butter
  • oregano
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Pork Loin Slices with Tomato

  • Lightly pound the pork loin slices with a meat tenderizer to slightly thin them out, then make a couple of small cuts on the edges to prevent them from curling during cooking. 

  • Then dust them with flour and shake off the excess. 

  • Wash the parsley leaves and chop them together with the peeled garlic clove, removing its central part. 

  • Chop the Taggiasca olives together with the capers. 

  • In a large skillet, heat the butter and oil before laying the escalopes in a single layer.

  • Cook them for a minute, then turn them over with tongs and cook for another minute on the other side. 

  • Then drizzle them with white wine and let it evaporate over high heat for a couple of minutes. 

  • Season the meat slices with a pinch of salt, then pour the tomato puree, chopped olives and capers, and the parsley and garlic mixture into the skillet. 

  • Scent with a generous pinch of oregano and season with another pinch of salt. Also add a couple of tablespoons of milk: these will help to reduce the acidity of the tomato.

  • Continue cooking over medium-low heat for another 7/8 minutes. 

  • Finally, transfer the pork loin slices with tomato to the serving platter and serve immediately, piping hot. Enjoy! Paola
