Today I suggest trying these potato and cheese sticks. They are soft bites that can be used as snacks or as a bread substitute. Delicious when served with cold cuts, cheeses, or simply with some dips. I must admit, I adore these tasty little things: I love eating them, but I also enjoy making them, kneading them, and watching them rise. Be warned, you can’t stop at just one, especially if you enjoy them warm.

Ingredients for the Potato Sticks
For those following a vegetarian diet, simply substitute Grana/Parmigiano with a similar cheese made with vegetable rennet.
Herbes de Provence are a mix of dried aromatic herbs. They can be found at the supermarket or online by clicking HERE. If you can’t find them, you can substitute with your preferred herbs.
- 12 oz potatoes (weighed with skin)
- 1 1/3 cups all-purpose flour
- 3 1/2 oz Grana Padano cheese, grated (or Parmesan)
- 1 egg (medium)
- nutmeg
- 2 tbsp butter
- Herbes de Provence
- salt

- 1 Potato Masher
- 1 Mixer
- 1 Bowl
- 1 Baking Tray
Preparation of Potato Sticks
Wash the potatoes thoroughly and boil them with the skin starting from lightly salted cold water.
Then pass them through a potato masher.
Collect the puree (about 11 oz) in a bowl or a mixer. Add a pinch of salt, the flour (sifted), the grated cheese, and a good grind of nutmeg.
Mix, then add the egg and the softened butter cut into pieces.
Knead everything and add a little more flour if the mixture is too soft,
Transfer the mixture into a bowl and also add a good pinch of Herbes de Provence.
Knead the dough a little more, then take small amounts and, on a floured surface, form small rolls. Cut each roll into pieces about 2.5 inches long.
Finally, arrange the potato sticks on a baking tray lined with parchment paper and bake them in a preheated ventilated oven at 356°F for 20 minutes.
Take them out of the oven and let them cool slightly before enjoying them. Enjoy! Paola
