When I prepare lunch or dinner, a question I regularly ask myself is “and what about the side dish?” Vegetables must always be there. So today I suggest you try these Provençal green beans. They are delicious and perfect for accompanying white meats. A recipe as simple as it is tasty that is prepared in just a few steps with a few ingredients. They are also excellent both hot and at room temperature. My son, however, claims that they are even better cold. They are also suitable for a lunch box, don’t you agree?

Ingredients for Provençal Green Beans
- 1.1 lbs green beans
- 2 cups tomatoes
- 1 yellow onion
- 1/3 cup dry white wine
- 1 bunch parsley
- extra virgin olive oil
- salt
- black pepper

Preparation of Provençal Green Beans
Trim the green beans and wash them well under running water.
Then cook them for 15/20 minutes in salted boiling water, then drain and set aside.
Peel the onion, cut it in half, and slice it into rings.
Wash the tomatoes and cut them into pieces.
In a large pan, sauté the onion in a few tablespoons of oil and a couple of tablespoons of water.
When it has softened, add the tomatoes, a generous pinch of salt, and a good grind of black pepper.
Mix, then pour in the white wine.
Let it simmer for a few minutes, then add the green beans and let them absorb the flavors for a couple of minutes, adjusting the salt only if necessary.
Finally, add a fragrance of finely chopped parsley. These Provençal green beans are excellent hot, warm, or at room temperature. Enjoy! Paola
