Puff Pastry and Zucchini Roses

Ingredients for 6 Puff Pastry Roses

To make these roses, the most suitable puff pastry is the rectangular one that allows you to obtain 5 identical roses. Since I only had round pastry at home, I used that and made four large roses and two smaller ones.

  • 1 round zucchini (large)
  • 1 roll puff pastry (rectangular or round)
  • A few slices cooked ham (thin)
  • Grated Grana Padano (or Parmesan)
  • extra virgin olive oil
  • salt

  • 1 Pastry wheel
  • 1 Baking tray oven
  • 1 Cast iron plate

Preparation of Puff Pastry Roses

  • Wash it, pat it dry with kitchen paper, and cut it into thin slices with a knife. Do not use a mandoline as you would get slices that are too thin and not suitable for this type of preparation.

  • Heat a ridged plate or a lightly oiled grill pan very well and grill the zucchini on both sides, turning them with tongs. As they are ready, transfer them to a plate and let them cool.

  • Roll out the puff pastry and cut it into strips about 2 inches high. I used a pastry wheel only for aesthetic reasons. However, a regular pizza cutter or a knife will work just fine.

  • Take each strip and position it horizontally.

    Cut the grilled zucchini slices in half and place them on the upper part of the puff pastry strip, slightly overlapping them as shown in the photograph: the rounded part should protrude from the puff pastry.

  • Slightly salt them, then lay strips of cooked ham on top.

  • At this point, fold the lower part of the puff pastry (the unfilled part) over the filled part, leaving the arcs of the zucchini exposed. Then press along the entire length of the strip.

  • Now roll the entire strip onto itself, forming the rose and seal it well with slightly moistened fingers.

  • As you make them, place the puff pastry roses obtained inside a baking tray or on a sheet pan lined with parchment paper and sprinkle them with grated cheese.

  • Finally, bake the puff pastry and zucchini roses in a static preheated oven at 356°F for 20/25 minutes. Take them out of the oven and let them cool slightly before serving. Enjoy! Paola
