In fact, you can prepare them a few hours before, bake them and serve them at room temperature or even a few days ahead by keeping the roll in the freezer and baking it at the last moment. They stay crisp, flavorful and ideal to accompany a glass of wine or some bubbly. The contrast between the crunchy puff pastry and the assertive taste of the olive pâté creates a simple but satisfying balance. With the addition of a creamy note and a sprinkle of sesame seeds they become even more interesting both in flavor and appearance. Ingredients for the puff pastry bites with olive pâté

  • 1 sheet puff pastry (rectangular)
  • 1.4 oz (~3 tbsp) black olive pâté
  • 1.8 oz (~3.5 tbsp) soft spreadable cheese (cream cheese)
  • sesame seeds
  • black pepper

Preparation of the puff pastry bites with olive pâté

  • Unroll the rectangle of puff pastry, keeping it on the sheet of parchment paper included in the package. Then gently roll over it with the rolling pin to even it out.

  • Spread the soft cheese over the pastry and sprinkle with freshly ground black pepper.

  • Now, with a small spatula, spread a thin layer of black olive pâté and sprinkle it with about a teaspoon of sesame seeds.

  • Roll the rectangle up starting from the long side, wrap it in the parchment paper and transfer it to the freezer for at least half an hour (30 minutes). This is a very important step because it will allow you to cut the rounds much more easily. However, if you are preparing these olive pâté puff pastry bites in advance, you can store the roll in the freezer until ready to use. Just remember to take it out 10 minutes before cutting to let it soften a little.

  • After chilling, slice the roll into rounds about 5–6 mm thick (about 1/4 inch). They may lose their round shape when cut. Try to reshape them gently with your fingers.

  • Arrange them on a baking sheet lined with parchment paper, spacing them apart as they will puff up during baking. Sprinkle a little more sesame seeds on top.
