Pumpkin chips are a really inviting and tasty snack. Also ideal for those following a vegan diet, they are perfect to nibble on instead of potato chips and are certainly much healthier. I guarantee that your children will like them too. The recipe I present today is uniquely simple and, for this reason, even more interesting. You won’t even need pen and paper; just read it!

Ingredients for pumpkin chips
The quantity of ingredients depends on how many pumpkin chips you want to prepare.
- Pumpkin
- Ground cinnamon
- Extra virgin olive oil
- Salt
- Black pepper

Preparation of pumpkin chips
Clean the pumpkin by removing the seeds, the inner fibers and all the rind. Wash it and dry it by patting with kitchen paper. Then cut it into thin slices with a knife or a vegetable peeler. Remember not to throw away the peel because it’s delicious. Read HERE to see how you can use it.
Arrange the pumpkin slices on the baking tray lined with parchment paper and brush them with a drizzle of oil.
Sprinkle the pumpkin chips with salt, pepper and cinnamon.
Bake them in a preheated fan oven at 338°F for 15/18 minutes; then turn off the oven and leave them inside for a few more minutes. Keep an eye on them to prevent them from drying out too much and burning.
