Quick Puff Pastry Bites

I called them quick puff pastry bites because they are simple and fast to prepare. However, I could have also called them “well-made puff pastry bites” because they are really delicious as well as cute and tasty. They are perfect as a snack to serve at an aperitif or as an appetizer. Great on any occasion, even on the holiday table where puff pastry appetizers are always appreciated. Don’t miss the recipe!

Ingredients for Quick Puff Pastry Bites

  • 1 sheet puff pastry (round)
  • 1 egg
  • milk
  • A few leaves butterhead lettuce
  • 2.1 oz canned tuna in oil (drained weight)
  • 0.9 oz mayonnaise
  • 12 cherry-sized mozzarella balls
  • 6 green olives
  • extra virgin olive oil
  • salt
  • black pepper

Tools

  • 1 Pastry Cutter diameter of 3 inches
  • 1 Rolling Pin
  • 1 Brush
  • 2 Small Bowls
  • 1 Baking Tray

Preparation of Quick Puff Pastry Bites

  • Unroll the puff pastry disk, gently roll over it with the rolling pin and cut out 12 circles with a pastry cutter or a glass of 3 inches in diameter. Remember… don’t throw away the leftover pastry but use it to create a sweet snack or a savory one.

  • Slightly fold down the top part of each circle. 

  • Transfer them onto a baking tray lined with parchment paper and make seven cuts as shown in the photo. This way they won’t puff up during baking.

  • In a small bowl, mix the egg with a splash of milk and brush the puff pastry with this mixture. 

  • Bake in a static preheated oven at 356°F for 15 minutes or until these bases are beautifully golden. Take them out and let them cool completely. 

  • Place a small leaf of butterhead lettuce on each puff pastry bite. 

  • Drain the tuna very well from its preserving oil, chop it, transfer it into a small bowl and mix it with mayonnaise until you get a cream. Salt and pepper to taste.

  • Place a teaspoon of this cream on the lettuce leaf.

  • Now place a mozzarella ball and half a green olive on the tuna cream, then season with freshly ground black pepper and a few drops of oil.

  • Proceed in the same way until all ingredients are used up. The quick puff pastry bites are ready. Enjoy! Paola
