Tools
I prepared the sauce for this recipe with the Thermomix, but at the end of the article, I have indicated the procedure to follow without the Thermomix.
- 1 Frying Pan
- 1 Pan
- 1 Pot
Preparation of Quick Savory Spaghetti
Heat a small pan and toast the taralli crumbs without any seasoning until they are golden and crispy. Remove them from the pan and set aside. If using simple bread, toast it with a drizzle of oil and season with a pinch of salt.
Peel the garlic and remove the inner core.
Wash the parsley leaves and dry them by patting them with a paper towel.
Place the parsley, garlic, pine nuts, and a pinch of chili pepper in the Thermomix bowl (the amount depends on your personal taste). Chop (8 sec. speed 5).
Using the spatula, gather the chopped mixture onto the bottom of the bowl, then add the anchovy fillets and 40 ml of oil. Sauté (3 min. 212°F speed 1)
Add the tomato pulp and season with salt only if necessary (I didn’t add any), then cook (5 min. 212°F speed 1).
Then pour the sauce into a large pan.
Meanwhile, cook the spaghetti in plenty of salted boiling water; drain them al dente, but not too much and keeping some of the cooking water aside. Transfer them directly to the sauce pan and mix all the ingredients well.
Let them flavor for a few moments over low heat. If necessary, soften the sauce by adding some of the reserved cooking water.
Distribute the quick savory spaghetti on individual plates, sprinkle them with toasted crumbs, and serve immediately to prevent the bread from losing its crunchiness. Enjoy! Paola
If you prepare these savory spaghetti without the Thermomix, chop garlic, parsley, pine nuts, and chili pepper. Heat the oil in a pan and add the anchovy fillets. Let them dissolve by crushing them with the back of a spoon, then add the prepared chopped mixture and cook for a few minutes. Finally, add the tomato pulp and continue cooking for a few more minutes. The rest of the recipe is the same.
