Today I am offering you sautéed Jerusalem artichokes, a very tasty, wholesome, and very easy to prepare side dish. It is a light recipe, perfect for those following a vegan diet. Ingredients for Sautéed Jerusalem Artichokes
- 1.5 lbs Jerusalem artichokes (weight peeled)
- 1 lemon
- 1 clove garlic
- 1 bunch parsley
- extra virgin olive oil
- salt
- black pepper

Preparation of Sautéed Jerusalem Artichokes
Wash Jerusalem artichokes thoroughly under running water, scrubbing them with a brush to remove any remaining dirt. Peel them using a vegetable peeler and a knife, and place them in a bowl filled with water and lemon juice to prevent them from browning. And now you’ve overcome the most tedious part of the recipe!
Then drain, rinse, pat them dry with paper towels, and thinly slice them with a mandoline.
In a pan, heat a few tablespoons of oil and brown the peeled garlic clove, removing its inner core.
Let it sizzle for a few moments, then add the Jerusalem artichokes, salt to taste, and stir to let them absorb the flavor.
Cover with a lid and cook over low heat for about fifteen minutes, stirring occasionally and adding if necessary a little vegetable broth to prevent them from drying out too much: they should be cooked but still slightly crunchy so keep an eye on them.
Just before the end of cooking, add finely chopped parsley and a generous grind of black pepper. Serve the sautéed Jerusalem artichokes hot or warm. Enjoy! Paola
