Thumbs up for this sesame cauliflower. A light and tasty side dish that I recommend to everyone. Maybe it’s because I adore sesame seeds and the flavor they give to dishes. Maybe it’s because I love cauliflower. The fact is I really liked this dish. Also, served this way, I managed to get my son to eat it even though he normally snubs this vegetable. A very simple little recipe that will allow you to bring something tasty to the table without spending hours at the stove. So if you have little time, consider it. And if you follow a vegan diet, omit the cheese; your side dish will still be delicious.

Ingredients for sesame cauliflower

  • 1 cauliflower
  • 2 tablespoons sesame seeds
  • 1 oz grated Grana Padano (or Parmesan)
  • extra virgin olive oil
  • salt
  • black pepper

  • 1 Pan with lid

Preparation of sesame cauliflower

  • Clean the cauliflower by removing the leaves and stem. Rinse it very well under running water, dry it by patting with paper towels, and divide it into florets. Cut the largest florets in half.

  • Then steam them for about 10–15 minutes: they should not fall apart but remain slightly al dente.

  • Put the sesame seeds in a large nonstick pan (big enough to hold all the cauliflower) and toast them without any fat for a few minutes over low heat.

    Once toasted, add a few tablespoons of oil and the cauliflower florets, seasoning with a generous pinch of salt and a good grind of black pepper.

  • Give a quick stir, cover with the lid and continue cooking over low heat for 6–7 minutes, stirring from time to time.

  • Shortly before the end of cooking, sprinkle the sesame cauliflower with the grated cheese, put the lid back on and let it melt. If you want a slightly charred effect, increase the heat in the final moments of cooking. Adjust salt if necessary.

  • Serve the sesame cauliflower hot or warm. Enjoy! Paola
