Sesame Stir-Fried Asparagus

I am a working woman, and as such, I perfectly understand what it means to come home and have to prepare a meal quickly. You need fast but also tasty and appetizing ideas because you don’t always feel like having the “same old soup.” At least, I get tired of eating the same things; I like to change. So I love recipes that allow me to make a good impression in a short time. It’s the case with these sesame stir-fried asparagus: a quick, simple, and light side dish. I really liked them. The lemon zest gives a very pleasant touch to the whole dish (and for this reason, I ask you not to omit it) and the sesame brings that crunch that never hurts.

Ingredients for Sesame Stir-Fried Asparagus

  • 1 bunch of asparagus
  • 1 scallion
  • zest of ½ untreated lemon
  • extra virgin olive oil
  • salt
  • black pepper
  • sesame seeds

Tools

  • 1 Peeler
  • 1 Pan with lid
  • 1 Grater for citrus

Preparation of Sesame Stir-Fried Asparagus

  • Wash the asparagus thoroughly under running water, then dry them by patting them with kitchen paper. 

    Remove the end of the stalk (the whitest and hardest part), then use a peeler to remove the lower fibrous part of the stalk.

  • Then cut the asparagus into pieces, keeping the tips whole.

  • In a pan, heat a drizzle of oil along with a couple of tablespoons of water and sauté the finely chopped scallion. I also cut a couple of green stalks. 

  • Let it sizzle for a few moments, then add the asparagus (including tips) and season with a generous pinch of salt and grated lemon zest. 

  • Put the lid on and cook over medium-low heat until the asparagus are tender but still crisp. Stir occasionally. It will take about 10 minutes. 

  • Finally, finish with an abundant grind of black pepper and sprinkle with white sesame seeds. 

  • The sesame stir-fried asparagus are ready to be served. They are excellent both hot and warm. Enjoy! Paola
