I love potatoes. I love them cooked in every possible way, and I imagine you’ve already figured that out given the large number of recipes that contain them. This skillet potato cake is a truly tasty dish that can be prepared in a flash without difficulty. It is a sort of thin frittata that is cooked on the stovetop and is really delicious. If you have little time but want to bring something tantalizing to the table, this could be an idea to consider.
But with grated potatoes, I recommend trying other very simple and tasty recipes:

Ingredients for Skillet Potato Cake
- 1.1 lbs potatoes (weight net of waste)
- 1/3 cup all-purpose flour
- 1 egg (medium)
- 3 oz caciocavallo cheese
- corn oil
- salt
- black pepper

- Grater with large holes
- 1 Bowl
- 1 Pan double frittata pan with a diameter of 10 inches
Preparation of Skillet Potato Cake
Peel the potatoes, wash them, pat them dry with a kitchen towel, and grate them (raw) with a grater with large holes. Then gather them in a bowl.
Add the flour, egg, a generous pinch of salt, a grind of black pepper, and mix well with a spoon to combine all the ingredients.
Heat a non-stick pan with a diameter of 10 inches slightly greased with oil (I used a double frittata pan because otherwise, I would make a mess), pour in the mixture, and level it well. If you are interested in purchasing this convenient pan, you can find it by clicking HERE.
Cover, lower the heat, and cook until the bottom is well browned, then flip the potato cake and brown the other side.
Meanwhile, reduce the caciocavallo cheese to julienne with a grater with large holes.
When the skillet potato cake is cooked on both sides, turn off the heat and spread the cheese on the surface; then scent with freshly ground black pepper.
Cover again and let the caciocavallo melt for a few minutes with the heat off; then serve the potato cake immediately, piping hot. Enjoy! Paola
