Today I want to share with you the recipe for these soft apple juice cookies. They are delicate, light, and perfect for accompanying morning breakfast or afternoon tea. The apple juice gives these treats a really pleasant aroma. Moreover, they are super easy to make because they don’t require a rolling pin or various molds: you mix, shape with your hands, and bake. Voilà!

Ingredients for Soft Apple Juice Cookies
- 2 1/2 cups all-purpose flour
- 7 tbsp sugar
- 1 egg
- 1/2 cup apple juice
- 1/4 cup corn oil
- 1 1/2 tsp baking powder
- powdered sugar
- ground cinnamon

I made the dough for these cookies by hand, but it can also be done with a mixer or a stand mixer. In this case, making them will be even quicker.

Preparation of Soft Apple Juice Cookies
Place the flour, baking powder, and sugar in a bowl and mix with a small hand whisk.
Then add the egg, apple juice, and oil and mix with a wooden spoon until you get a soft, smooth, and slightly sticky dough.
Transfer it to a floured surface, take pieces of 1 oz and shape them into small logs the size of a ladyfinger with your hands.
In a plate, mix some powdered sugar with cinnamon: you can adjust the amount of this spice as you like.
Roll the cookies in this mixture and transfer them to a baking tray lined with parchment paper, keeping them spaced apart as they will expand during baking.
Bake the soft apple juice cookies in a preheated static oven at 356°F for 15/20 minutes. Remove from the oven and let them cool before touching and transferring them to the serving plate. Enjoy! Paola
