And who would say that there is no yeast in this soft chocolate cake? Yet it is so. Here, the leavening is guaranteed by the combination of baking soda and sour cream, two ingredients that cannot be replaced. The result is a delicious cake that has a crispy coating and a perfectly moist heart. Not to mention the softness. Mmmmmm! Well… otherwise, I wouldn’t have called it that, would I?

Ingredients for Soft Chocolate Cake
- 2 cups all-purpose flour
- 7 oz dark chocolate
- 6.5 oz butter
- 1 cup water
- 1 cup sugar
- 0.4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 pinch salt
- 3 eggs (medium)
- 4.5 oz sour cream

- 1 Cake Pan 22 cm (8.5 in) diameter
Preparation of the Soft Chocolate Cake
In a large bowl, sift the flour together with the baking soda. Then add the sugar, a pinch of salt, and the unsweetened cocoa powder, also sifted through a fine mesh sieve.
Mix all the ingredients well with a small hand whisk and set aside.
Chop the chocolate into coarse flakes with a knife.
Place the flakes in another bowl with the butter cut into pieces and melt using a bain-marie or the microwave oven.
Mix well with a small hand whisk, then pour hot water over the mixture and combine everything.
Once a smooth and homogeneous mixture is obtained, pour it into the bowl of dry ingredients and incorporate it perfectly.
At this point, add the eggs in several additions, mixing carefully after each addition.
Finally, also add the sour cream.
Pour the obtained batter into a 22 cm (8.5 in) diameter cake pan previously lined with parchment paper.
Bake the chocolate cake in a preheated static oven at 356°F for about 45-55 minutes. Perform the toothpick test to check the actual baking: inserted in the center of the cake, it should come out dry and clean. Otherwise, prolong the baking for a few more minutes.
Remove the soft chocolate cake from the oven and let it cool completely before removing it from the pan and transferring it to the serving plate. If desired, you can sprinkle it with some powdered sugar or cocoa powder. I didn’t add anything. Enjoy! Paola
