No cookie cutters, electric whisks, or even a mixer are needed to prepare these delicious soft cookies. All you need is a bowl and a small hand whisk. They are very delicate and also light as they don’t contain butter. Moreover, the amount of sugar is really small, placing them in my “not too sweet desserts” category. They are perfect to accompany tea, but I assure you that you will enjoy them at any other time of the day just as I did. A continuous back-and-forth to the tin box where I had stored them.

Ingredients for the soft cookies

  • 2 cups all-purpose flour
  • 1 egg (medium)
  • 1/4 cup sugar
  • 1/2 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1 packet vanilla powder
  • Half package baking powder (8 g)

Tools

  • 1 Bowl
  • 1 Hand whisk
  • 1 Rolling pin
  • 1 Pastry wheel smooth
  • 1 Baking sheet

Preparation of the soft cookies

  • Crack the egg into a bowl and lightly beat it with a small hand whisk. 

  • Then add 3 tbsp of sugar and beat again with the whisk.

  • Add the yogurt and vegetable oil and mix them perfectly into the mixture.

  • Then, gradually add the flour previously mixed with the baking powder and vanilla. Keep mixing with the whisk until all the liquids have been absorbed and a soft dough is obtained.

  • Transfer it onto a lightly floured work surface, knead it for a moment with your hands until it becomes smooth and homogeneous, and roll it out with a rolling pin to form a small rectangle about 1/3 inch thick. 

  • Sprinkle the surface with the remaining sugar (10 g) and gently roll over it with the rolling pin to adhere it well to the dough.

  • Now, using a smooth pastry wheel (perfect for pizza), cut strips about 1/2 inch wide starting from the long side of the rectangle.

  • Then make two more horizontal cuts to obtain sticks as shown in the photograph.

  • Finally, place the soft cookies on the baking sheet lined with parchment paper, keeping them slightly apart, as they will puff up a bit during baking. 

  • Bake them in a preheated static oven at 356°F for 15 minutes. Take them out and enjoy them warm. If you like, you can sprinkle them with powdered sugar, which I did not use as I found them perfect as they are. The next day, pass them in the oven for a few moments so they regain their crispness.
