Ingredients for Speck Puff Pastries
With these quantities, I made 18 Speck Puff Pastries.
You can use green or black olive pâté. I prepared these pastries both ways, and they are always delicious.
- 1 sheet puff pastry (rectangular)
- olive pâté (green or black)
- 3.5 oz speck (thinly sliced)

Preparation of Speck Puff Pastries
Unroll the rectangular puff pastry, keeping it on the parchment paper provided in the package, and brush with green (or black) olive pâté.
Then place the speck slices on top, removing any excess fat.
At this point, fold the rectangle into 5 as shown in the following photos.
Fold the two short sides first.
Then fold them a second time until they almost meet at the center.
Finally, overlap them.
Wrap the roll in the parchment paper and place it in the freezer for at least twenty minutes (this will make it much easier to cut). The roll can also be prepared in advance and left in the freezer until ready to use. In this case, let it sit at room temperature for a few minutes before slicing.
After the rest time in the freezer, slice it into rounds about 0.4 inches thick and place them on the baking sheet covered with parchment paper, leaving space between them as they will expand during baking.
Bake the speck puff pastries in a preheated static oven at 350°F for about 30 minutes. Remove them from the oven and let them cool slightly before serving. Enjoy! Paola
