Today, spicy baked potatoes! I assure you they are one of those side dishes that everyone agrees on because they are simple yet have that extra tasty touch that makes the difference. In this version, I focused on practicality as well as taste. I used pre-cooked steamed potatoes and then cheese and paprika to create that irresistible crust that wraps around them. The result is soft and tasty potatoes with that fragrant mix that makes them truly special. Tell me the truth: would you resist the crust or would you steal it first? Ingredients for Spicy Baked Potatoes
I chose pre-cooked steamed mini potatoes because this is meant to be a quick recipe, made in a jiffy, as I like to say: you can easily find them vacuum-sealed at the supermarket, and they save you a lot of time. Alternatively, new potatoes, which are small and round as well, or common potatoes, cut into slices, work just fine: in both cases, they should be parboiled first. Obviously, they should be slightly tender and not fully cooked as they will finish cooking in the oven. If you use large potatoes, I recommend peeling them and parboiling them sliced just long enough to soften them. I would say that common potato slices should be parboiled for 6-8 minutes, while whole new potatoes require 10-12 minutes. But keep an eye on them.
- 1.1 lbs mini potatoes
- 1/2 cup Grana Padano cheese, grated (or Parmesan)
- paprika
- extra virgin olive oil
- salt

Preparation of Spicy Baked Potatoes
Line a baking sheet with parchment paper and brush it with oil.
In a bowl, mix 1/4 cup of grated cheese with half a teaspoon of paprika: as always, you can adjust the spice to your personal taste.
Distribute this mixture over the oil.
Rinse the pre-cooked mini potatoes under running water and dry them with a paper towel. Then cut them in half lengthwise.
Place the potatoes on the baking sheet with the cut side down.
At this point, brush them with more oil and sprinkle them with the remaining 1/4 cup of grated cheese. Finally, dust them with more paprika using a small sieve and lightly salt them.
Bake them in a preheated static oven at 410°F for 20 minutes + a few minutes using the grill function. When finished, they should be golden brown. Enjoy! Paola
