This strawberry and yogurt parfait is a perfect dessert for hot summer days when you don’t even want to think about turning on the oven, but still want to prepare something sweet. So… here’s the solution! A fresh dessert with lots of fruit to serve at the end of the meal. Besides being delicious, it’s also very easy to prepare: just blend everything in a mixer, pour it into molds, and freeze. What are you waiting for? Let’s see how it’s done!

Ingredients for the Strawberry Parfait
With these quantities, I prepared 6 individual parfaits.
- 9 oz strawberries
- 2 tbsp sugar
- 4.5 oz berry yogurt
- 0.5 cup fresh cream
- vegetable oil (for the molds)

- 1 Blender (or mixer)
- 6 Molds individual
Preparation of the Strawberry Parfait
Wash the strawberries thoroughly under running water (avoid soaking them as they will absorb too much water), dry them carefully by patting them with kitchen paper, then cut them into pieces.
Transfer them to a mixer (or a blender) with the sugar and blend until you get a smooth mixture. I used the Thermomix (15 sec. speed 5/6) but any mixer will do.
At this point, add the yogurt and cream (both well chilled from the fridge) and blend again until all the ingredients are perfectly mixed. I did this by sight in several steps.
Brush individual molds with a bit of vegetable oil (perfect because it’s tasteless) and pour the obtained mixture inside.
Place in the freezer for at least 3 hours.
Each strawberry and yogurt parfait should be taken out of the freezer about ten minutes before being consumed, so it softens slightly. If you use smooth molds like mine, decorate your dessert with pieces of fresh strawberry, some berries (raspberries, redcurrants, blueberries), and a few mint leaves. Enjoy! Paola
