Super Tasty Stuffed Sandwiches

Today, I want to share with you the recipe for these stuffed sandwiches. A delicious sauce makes them really tasty, and the preparation is very simple. You’ll lick your fingers. They are perfect for a quick lunch at the office or at the beach. Perfect for a snack, a rustic informal dinner, or a Sunday brunch. And if you cut them into smaller pieces, they’re also perfect for an aperitif dinner. After all, a sandwich is good at any time of the day.

Ingredients for 4 Stuffed Sandwiches

For the preparation of these four stuffed sandwiches, I used two mini baguettes. Alternatively, you can use one long classic baguette and cut it into four pieces. 

  • 2 mini baguette
  • 1.4 oz sun-dried tomatoes in oil
  • 2.1 oz cream cheese
  • 1 egg (medium)
  • 0.5 oz capers (in salt or pickled)
  • 1/4 clove garlic
  • salt
  • black pepper
  • 4 tsp extra virgin olive oil
  • 1.1 oz Genovese pesto

Tools

  • 1 Small Pot
  • 1 Immersion Blender
  • 1 Small Bowl

Preparation of Stuffed Sandwiches

  • Place the egg in a small pot filled with cold water and cook for nine minutes from boiling.

    Rinse the capers and dry them by patting with kitchen paper. Do this whether you use salted or pickled capers. 

  • Put the capers, chopped boiled egg, peeled garlic, a pinch of salt, a generous grind of black pepper, 4 tsp of oil, and 1.1 oz of Genovese pesto in the glass of an immersion blender. Blend in bursts until you get a smooth sauce.

  • Cut each mini baguette in half, then cut each sandwich on one side and open it like a book.

  • Spread cream cheese on both sides, then layer with the green sauce. Make sure to divide the amount of each ingredient correctly so that all four sandwiches are filled the same way.

  • Drain the sun-dried tomatoes from their preservation oil, cut them into small pieces, and distribute some inside each sandwich on top of the green sauce. 

  • Close the stuffed sandwiches and serve them, decorating as desired. You can simply skewer them with colorful picks or, as I did, wrap them with a strip of parchment paper and tie with a ribbon. Enjoy! Paola
