Today I propose a delicious and very easy-to-prepare side dish: sweet and sour red cabbage. This vegetable is rich in vitamins and antioxidants and is very important for the health of our bodies. Therefore, we should eat it much more often. And let’s not forget that it has very few calories, making it the perfect ally when on a diet.

Ingredients for the Sweet and Sour Red Cabbage
- 10.5 oz red cabbage (weighed clean)
- 1 clove garlic
- 1/4 cup water
- 2 tbsps balsamic vinegar
- 1 tbsp brown sugar
- extra virgin olive oil
- salt
- black pepper

Preparation of Sweet and Sour Red Cabbage
Remove the outer leaves of the red cabbage, wash well under running water, dry by patting with kitchen paper, and cut into thin strips. For convenience, I used a slicer but it can be easily done with a knife too.
In a pan, heat a few tablespoons of oil and sauté a peeled garlic clove, halved and deprived of its central core.
Let it sizzle for a moment before adding the red cabbage.
After letting it flavor for 2/3 minutes, add the water, a couple of generous pinches of salt, a generous grind of black pepper, balsamic vinegar, and brown sugar.
Continue cooking over low heat for about twenty minutes, stirring occasionally. At the end of cooking, the liquids should be evaporated, and the red cabbage should be soft but still crunchy. Of course, if you prefer it more tender, you just need to add a few tablespoons of hot water and continue cooking for a few more minutes.
Remove the garlic and serve the sweet and sour red cabbage warm or even cold. Enjoy! Paola.
