Sweet Apricot Focaccia

It’s called sweet apricot focaccia, but it’s really a cake. A delicious cake that stays flat and thin as it contains no yeast. It’s very quick and truly easy to prepare. A slightly different fruit dessert, made even more delicious by the thin crunchy crust that forms on top. Ingredients for Sweet Apricot Focaccia

  • 5 apricots
  • 3/4 cup all-purpose flour
  • 3 egg yolks
  • 1/3 cup granulated sugar
  • 1/4 cup butter
  • 2 tbsp milk
  • 1 pinch salt
  • powdered sugar (for sprinkling)

  • Electric mixer
  • 1 Spatula
  • 1 Sieve fine mesh
  • 1 Pan 9-inch square

Preparing Sweet Apricot Focaccia

  • Melt the butter in a double boiler or microwave and let it cool.

  • Line a 9-inch square pan with parchment paper.

  • Wash the apricots, pat them dry with kitchen paper, cut them in half, remove the stone, and slice them.

  • In a bowl, combine the yolks and sugar and beat with an electric mixer for a few minutes until the mixture is light and fluffy.

  • Then add the now cooled butter and mix again with the mixer.

  • Gradually add the flour by sifting it through a fine-mesh sieve and alternating with the milk. Also add a pinch of salt and mix with a spatula until the dry ingredients are perfectly incorporated into the mixture.

  • Pour the batter into the prepared pan and arrange the apricot slices on top.

  • Finally, sprinkle the entire surface with powdered sugar.

  • Bake the sweet apricot focaccia in a preheated static oven at 356°F for 40 minutes. If it browns too much, cover it with a sheet of foil for the last 5 minutes of baking.

    Remove it from the oven and let it cool completely before removing it from the pan. If necessary, sprinkle with more powdered sugar. Enjoy! Paola
