It’s called sweet apricot focaccia, but it’s really a cake. A delicious cake that stays flat and thin as it contains no yeast. It’s very quick and truly easy to prepare. A slightly different fruit dessert, made even more delicious by the thin crunchy crust that forms on top. Ingredients for Sweet Apricot Focaccia
- 5 apricots
- 3/4 cup all-purpose flour
- 3 egg yolks
- 1/3 cup granulated sugar
- 1/4 cup butter
- 2 tbsp milk
- 1 pinch salt
- powdered sugar (for sprinkling)

- Electric mixer
- 1 Spatula
- 1 Sieve fine mesh
- 1 Pan 9-inch square
Preparing Sweet Apricot Focaccia
Melt the butter in a double boiler or microwave and let it cool.
Line a 9-inch square pan with parchment paper.
Wash the apricots, pat them dry with kitchen paper, cut them in half, remove the stone, and slice them.
In a bowl, combine the yolks and sugar and beat with an electric mixer for a few minutes until the mixture is light and fluffy.
Then add the now cooled butter and mix again with the mixer.
Gradually add the flour by sifting it through a fine-mesh sieve and alternating with the milk. Also add a pinch of salt and mix with a spatula until the dry ingredients are perfectly incorporated into the mixture.
Pour the batter into the prepared pan and arrange the apricot slices on top.
Finally, sprinkle the entire surface with powdered sugar.
Bake the sweet apricot focaccia in a preheated static oven at 356°F for 40 minutes. If it browns too much, cover it with a sheet of foil for the last 5 minutes of baking.
Remove it from the oven and let it cool completely before removing it from the pan. If necessary, sprinkle with more powdered sugar. Enjoy! Paola
