Today I’m offering you a Swiss chard side dish that’s as simple as it is tasty and healthy. I admit that Swiss chard is a vegetable I rarely use, but I now promise to cook it more often because I found it surprisingly good. Not to mention that it is rich in vitamins, minerals, and fiber. The dish is very easy, the ingredients are few, and the cooking is done in a pan, so follow my advice and try it as soon as possible. Then let me know.

Ingredients for the Swiss Chard Side Dish
- 1 bunch Swiss chard (500/600g)
- 1 clove garlic
- A few oil-packed anchovy fillets
- chili pepper (to taste)
- cup water
- extra virgin olive oil
- salt
- black pepper

Preparation of the Swiss Chard Side Dish
Remove the terminal part of the Swiss chard bunch and wash the leaves very well under running water.
Drain them, then separate the stems from the green part of the leaves.
Cut the stems into sticks, halving the longer ones.
Cut the leaves into strips.
In a large pan, heat a few tablespoons of oil and brown the clove of garlic roughly chopped. If you don’t like garlic, you can leave it whole and remove it at the end of cooking.
Let it sizzle for a few moments, then add the anchovy fillets and a pinch of chili flakes (dose to taste based on your personal preference).
Melt the anchovies by crushing them with the back of a wooden spoon.
Once completely dissolved, add the Swiss chard stems and sauté them over high heat for 3/4 minutes, stirring often.
Now add the leaves, a generous pinch of salt, and a grind of black pepper, and let everything wilt for a few minutes.
Finally, pour hot water into the pan, cover it, lower the heat, and cook for about twenty minutes, stirring occasionally. Adjust salt, if necessary, when done. Serve the Swiss chard side dish hot or warm. Enjoy! Paola
