Tasty Cold Pasta alla Sciuè Sciuè

As soon as the temperatures begin to rise, the desire for fresh, tasty, and quick preparations arises. That’s why today I want to offer you my delicious tasty cold pasta alla sciué sciué. I love this definition because it perfectly conveys the idea of a dish that doesn’t require much effort. In my house, it was a hit, and I immediately regretted not making more because we would have loved to eat it the next day too. Ingredients for the Tasty Cold Pasta

In this recipe, to speed things up, you can use ready-made pesto alla Genovese. If you have a Thermomix and want to make it yourself, you can follow the recipe described HERE.

  • 12 oz short pasta (any type you like)
  • 9 oz cherry tomatoes (datterini or cherry)
  • 7 oz mozzarella
  • 4.5 oz pesto alla Genovese
  • A few leaves basil
  • 1 tbsp capers
  • 1 oz Taggiasca olives
  • extra virgin olive oil
  • salt

Preparation of the Tasty Cold Pasta

  • Cook the pasta in plenty of salted boiling water, drain it quite al dente, transfer it to a bowl or a baking dish, season it with a drizzle of oil, and let it cool.

  • Meanwhile, pour the pesto alla Genovese into a bowl, dilute it with three tablespoons of the pasta cooking water, and mix well.

  • Wash the cherry tomatoes, pat them dry with kitchen paper, and cut them into quarters.

  • Then, add them to the pesto along with the diced mozzarella. Mix and also add the capers and Taggiasca olives. Scent everything with a few basil leaves broken by hand.

  • When the pasta has cooled, dress it with the prepared sauce, mixing gently until all the ingredients are perfectly combined.
