Tasty Pan-Fried Carrots

Preparing these pan-fried carrots won’t require much effort as they are really simple. As simple as they are tasty. A flavorful and original side dish that will be appreciated even by those who, like me, do not particularly like boiled carrots.

Ingredients for Tasty Pan-Fried Carrots

  • 1.1 lbs carrots (net weight without waste)
  • 2 tbsps butter
  • 1 tbsp salted capers
  • 1 oz Taggiasca olives
  • 2.5 oz pecorino cheese
  • water (1 1/4 to 1 3/4 cups)
  • salt
  • black pepper

  • 1 Vegetable Peeler
  • 1 Pan

Preparation of Tasty Pan-Fried Carrots

  • Trim the carrots and scrape them (I used a vegetable peeler).

    Wash them, pat them dry with paper towels, and cut them into oblique slices.

  • Transfer them to a large pan (without any seasoning) trying not to overlap them too much and cover them with water. You will need about 1 1/4 to 1 3/4 cups, but adjust according to your pan.

  • Add the butter in pieces and a generous pinch of salt.

  • Place on the stove and cook over low heat for about half an hour or until they are tender (not mushy) and the water has almost completely evaporated. Stir gently from time to time.

  • Meanwhile, cut the pecorino into coarse flakes. You can use a vegetable peeler or a cheese slicer. If you don’t have one, you can find it online by clicking HERE.

  • Desalt the capers under running water and pat them dry with paper towels.

  • When the carrots are tender, add the capers and Taggiasca olives, increase the heat, and sauté everything for a few moments.

  • Finally, add the pecorino flakes and let them melt slightly.

    Turn off the heat and season with freshly ground black pepper.

  • The pan-fried carrots are ready to be served hot. Enjoy! Paola
