Tasty Pasta in a Flash: I couldn’t have chosen a more fitting name for this main dish. The sauce doesn’t require cooking and is prepared in a few steps by blending all the ingredients in a mixer. It also has the advantage of being made ahead, making the whole recipe even smarter, especially for those who work. The result? Well… this pasta is a show: flavorful, creamy, super appetizing. Once the main course is finished, they’ll definitely ask if there’s any left. Shall we bet?

Ingredients for Tasty Pasta in a Flash

  • 12 oz rigatoni
  • 4.6 oz sun-dried tomatoes in oil
  • 1 shallot
  • 2 tbsp extra virgin olive oil
  • 1 bunch parsley
  • 2 anchovy fillets in oil
  • 7 oz stracciatella cheese
  • salt

  • 1 Mixer (I use the Thermomix)
  • 1 Small Bowl
  • 1 Pot

Preparation of Tasty Pasta in a Flash

  • Drain the sun-dried tomatoes from the preserving oil and transfer them to a mixer. Add the peeled and sliced shallot, parsley leaves, and anchovy fillets, and blend until all ingredients are minced. I used the Thermomix, proceeding by intuition and gathering the mixture towards the center of the bowl several times.

  • Then, add the oil and blend again to mince the ingredients further. Taste the pesto obtained and adjust salt only if necessary. 

  • Transfer it to a bowl and soften it with a few tablespoons of pasta cooking water until the desired creaminess is achieved. The water helps to obtain a soft pesto without overdoing it with oil. If you prefer, you can add more oil when blending everything.

  • Meanwhile, cook the pasta in plenty of salted boiling water, drain it al dente without over-draining, keeping aside some cooking water. Immediately return it to the still warm pot, add the sauce, and mix until it’s perfectly coated. If it’s necessary to soften the sauce further, add a few tablespoons of the reserved water.

  • Serve the tasty pasta in a flash on individual plates, decorate with some stracciatella cheese dollops, and serve immediately, piping hot. Enjoy! Paola.
