The three-color bundt cake I am presenting today is a super soft and delicate cake, perfect for breakfast or to make a coffee break even more pleasant. It is easy to prepare and visually appealing thanks to the final effect created by the different batters.

Ingredients for the Three-Color Bundt Cake
- 2 cups all-purpose flour
- 2 eggs (medium)
- 3/4 cup sugar
- 3/4 cup milk
- 1/2 cup butter
- 2 tsp unsweetened cocoa powder
- 1 tsp sweetened cocoa powder
- 1 packet vanillin
- 1 packet baking powder (16 g)
Tools
- 1 Small Bowl
- 1 Large Bowl
- Electric Beaters
- 1 Fine Mesh Sieve
- 3 Medium-Small Bowls
- 2 Spatulas
- 1 Bundt Cake Pan 22 cm diameter
Preparation of the Three-Color Bundt Cake
First, cut the butter into pieces and melt it in a small bowl using a double boiler or microwave; then let it cool slightly.
Crack the eggs into a large bowl, add the sugar, and beat with electric beaters until the mixture is light and frothy.
Add the milk and slightly cooled butter, and mix again with the beaters.
Then gradually add the flour, sifting it together with vanillin and baking powder through a fine mesh sieve. Incorporate it perfectly by mixing with a spatula. You should obtain a smooth and lump-free batter.
At this point, divide it into three more or less equal parts. I recommend using three identical bowls to estimate the quantity by eye and remember that a gram more or less makes no difference.
Add the unsweetened cocoa to the first bowl and mix until a uniform color is obtained.
Do the same with the second bowl by adding the sweetened cocoa.
Leave the mixture in the third bowl white.
Now pour the three batters into a 22 cm diameter bundt pan, alternating them several times without ever mixing them. The pan must be lined with parchment paper or brushed with pan release (recipe HERE). I used a silicone mold and just buttered it.
You can alternate them as you prefer. The important thing is not to mix them together.
If you are interested in purchasing the HUG mold that I used, you can find it by clicking HERE.
Bake the three-color bundt cake in a preheated static oven at 340°F for 35 minutes. Do the toothpick test before removing it from the oven. Inserted in the center, it should come out dry and clean. If not, extend the baking time by a few minutes.
Allow the three-color bundt cake to cool completely before removing it from the pan and transferring it to a serving plate. If desired, you can sprinkle it with powdered sugar. Enjoy! Paola
