Whipped Butter

Do you know whipped butter? It’s a soft and fluffy cream, perfect for spreading on crostini or for creaming risottos. For example, I always use it when serving salmon crostini and I also like it spread on a slice of bread and sprinkled with sugar. It’s very easy to prepare by incorporating sparkling water into the butter. So, just two ingredients, a few steps, and the magic is done. A true delight. But remember…to get a good result, it’s necessary to use quality butter.

Ingredients for whipped butter

For this preparation, you cannot use clarified butter as it lacks water.

Of course, you can increase or decrease the quantities while always maintaining the correct proportion between butter and water.

  • 5.3 oz butter
  • sparkling water (50/70 ml)

Preparation of whipped butter

  • Place the butter cut into pieces in a bowl and let it soften at room temperature or microwave it for a few seconds. It must not melt, just soften slightly.

  • Then mash it with a fork.

  • At this point, start working it with electric beaters while gradually adding sparkling water. Add a little at a time, between 50 and 70 ml, or until you achieve the desired fluffy consistency. Be careful though, because beyond a certain amount, the butter will no longer incorporate liquids.

  • Et voilà! The whipped butter is ready to be transferred to a small bowl. It keeps in the refrigerator for a few days but tends to go rancid faster than unworked butter. Therefore, I suggest you prepare only the amount you need. It’s so quick to make that you can whip up more as needed. Enjoy! Paola
