Whole Wheat Chocolate Cookies

No eggs, no butter, and no baking powder in these delicious whole wheat chocolate cookies enriched with oatmeal and coconut flour. They are perfect to munch on at any time of the day when we crave “something sweet.” Particularly suitable for those following a vegan diet and for anyone who suffers from yeast, lactose, or egg intolerances. But what matters is that they are delicious and allow us to indulge without too much guilt.

Ingredients for the Whole Wheat Chocolate Cookies

With these quantities, I prepared 21 whole wheat chocolate cookies.

  • 1 3/4 cups whole wheat flour
  • 1/2 cup brown sugar
  • 1 1/4 cups rolled oats
  • 1 1/4 cups grated coconut
  • 1.75 oz dark chocolate
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/4 cup vegetable oil
  • 1/2 cup water (warm)
  • 1 pinch salt

Preparation of the Whole Wheat Chocolate Cookies

  • Chop the dark chocolate into coarse flakes with a knife.

  • Place all the dry ingredients in a bowl (meaning the flour, sugar, cream of tartar, baking soda, coconut, oats, pinch of salt, and chocolate flakes) and mix them carefully.

  • Then add the warm water and oil and knead until you get a rather crumbly mixture. If you prefer, you can do all this operation in a mixer.

  • Take a couple of spoonfuls of these crumbs and, with damp hands, compact the mixture into balls weighing about 1 oz each. It will not be necessary to weigh them all. Once you make and weigh the first one, you can easily eyeball the rest.

  • Place the balls on the baking sheet lined with parchment paper, flatten them with the palm of your hand, and give each cookie a fairly regular flattened shape.

  • Proceed in the same way until the dough is finished: you will need 2 baking sheets.

  • Bake the whole wheat chocolate cookies in a preheated fan oven at 340°F for about 20 minutes. The fan will allow you to bake both sheets simultaneously. Take them out of the oven and let them cool slightly before enjoying them. Enjoy! Paola
