Zucchini Sandwich

These zucchini sandwiches are delightful and easy to prepare. They will encourage your children to eat vegetables. There is no bread here, but two beautiful breaded zucchini slices filled with ham and cheese. I don’t need to tell you there wasn’t a crumb left; actually, if I don’t hurry, I won’t even get to taste them. Polished off! For this recipe, I recommend using round zucchinis from which you can cut nice slices (impossible to do with long ones).

Ingredients for Zucchini Sandwiches

With one zucchini, I made 5 sandwiches. 

If you don’t have cornmeal, you can use all-purpose flour.

Measure the flour, grated cheese, and breadcrumbs “by eye”.

  • 1 round zucchini
  • 1 egg (medium)
  • all-purpose flour
  • yellow cornmeal (optional)
  • breadcrumbs
  • 2 slices cooked ham
  • 5 slices scamorza (mild or smoked)
  • salt
  • Grana Padano, grated (or Parmesan)

  • 1 Deep dish
  • 2 Plates
  • 1 Baking tray
  • Parchment paper

Preparation of Zucchini Sandwiches

  • Wash the zucchini, dry it with kitchen paper, trim the ends, and cut it into slices about 1/8 to 1/4 inch thick.

  • Prepare 3 plates: one with all-purpose flour mixed with some cornmeal, another with the salted and lightly beaten egg, and a third with breadcrumbs mixed with some grated cheese.

  • Pass each slice of zucchini first in the flours, then in the egg, and finally in the breadcrumbs.

  • Place the slices on a baking tray lined with parchment paper and bake in a preheated static oven at 355°F for 20 minutes, turning them halfway through.

  • Once cooked, fill a zucchini slice with a piece of ham, place a slice of scamorza on top, and close the sandwich with another slice of zucchini. Try to pair slices of the same size. I used a pastry cutter to cut the ham into a circle of the same size, but it’s not necessary.

  • Grill the zucchini sandwiches under the oven broiler for a few minutes or until they are golden and the cheese has slightly melted.

  • Take them out of the oven and serve immediately, very warm. Enjoy! Paola
