This almond milk and chocolate pudding is incredibly creamy, with an intense chocolate flavor, just the way I like it. I used almond milk not so much because I wanted to make a lactose-free pudding version, but because I really like its taste and use it often. However, at the end of the recipe, you will find all the tips for making this simple spoon dessert entirely lactose-free!
It’s quick to prepare, with a few simple ingredients and it’s also great for kids’ snacks. Of course, it’s delicious on its own, eaten by the spoonful without any further additions, even though I, as you can see, like it with whipped cream and a few extra chocolate shavings, to add a crunchy touch.

Ingredients
- 1/8 cup unsweetened cocoa powder
- 2 tbsp sugar
- 1 tsp vanilla sugar
- 3 tbsp cornstarch
- 2 pinches salt
- 2 cups almond milk
- 2 oz dark chocolate
- 2 oz milk chocolate
- as needed whipped cream
- as needed dark chocolate (shaved)
Steps
To prepare the almond milk and chocolate pudding, place the unsweetened cocoa powder, sugar, vanilla sugar, cornstarch, and salt in a saucepan. Mix.
Then pour in the almond milk and mix everything with a whisk until you obtain a lump-free mixture. Turn on the heat and bring to a boil while stirring. Let it boil for about a couple of minutes, until the mixture has thickened slightly.
Remove from the heat and add the chocolate pieces. Stir until melted.
Pour the pudding while still warm into cups or small glasses and let it cool or at least warm up.
If you don’t want a skin to form on the surface, cover with cling film directly in contact.
Serve your almond milk and chocolate pudding with whipped cream and chocolate shavings to taste.
Tips
If you want to make the almond milk pudding entirely lactose-free, replace the milk chocolate with more lactose-free dark chocolate (adjust the sugar quantity if needed) and serve with plant-based whipped cream.
