Apple and Cinnamon Cake

This apple and cinnamon cake is super soft, with a spiced taste, but not too much, and all the goodness of apple chunks in the batter, making the cake even softer and more succulent.

It’s really easy to prepare, just make sure to take the butter and eggs out of the fridge in advance, as for most cakes, it’s important that the ingredients are at room temperature for the best result.

For a change, you can also replace the apple with a pear, which always pairs well with cinnamon.

Ingredients

  • 5.3 oz butter (at room temperature)
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla sugar
  • 3.5 oz sour cream
  • 3 eggs (at room temperature)
  • 1 2/3 cups flour (+ 1 tablespoon extra for the apple)
  • 1 teaspoon baking powder
  • 3 teaspoons cinnamon
  • 2 pinches salt
  • 1 apple
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon

Steps

  • To prepare the apple and cinnamon cake, preheat the oven to 350°F and line the bottom of a 9-inch cake pan with parchment paper.

    Put the softened butter, cut into cubes, in a bowl along with the sugar, brown sugar, and vanilla sugar. Beat everything with an electric mixer for a few minutes until you get a fluffy mixture.

    Add the sour cream and beat with the mixer until you get a homogeneous mixture.

  • Then add the eggs, one at a time, always beating with the mixer until absorbed before adding the next one.

    Mix the flour with the baking powder, cinnamon, and salt and sift everything over the butter and egg mixture. Briefly beat with the electric mixer just until no more visible traces of flour remain.

  • Wash and peel the apple and cut it into small cubes, removing the core. Mix the apple cubes with a tablespoon of flour, then add them to the batter and incorporate with the help of a spatula using upward movements.

    Transfer the mixture evenly into the cake pan.

    Separately, mix the brown sugar with the cinnamon and then spread it over the entire surface of the cake.

    Bake for about 35 minutes at 350°F. Do the toothpick test.

    Remove your apple and cinnamon cake from the oven and let it cool on a wire rack.
