Oh the avocado toast, that’s how our days began during the recent weekend in Seville. A dish that is now ubiquitous on every menu of places offering breakfast and brunch. The avocado toast is often also enriched with a poached egg, a slice of ham, or a slice of salmon.

This delight has Australian and American origins and is really simple to prepare. All you’ll need to do is mash a ripe avocado with a fork, season with a pinch of salt and pepper, a drizzle of extra virgin olive oil, and a few drops of lemon. Be careful not to overdo it with the lemon; its flavor shouldn’t dominate, it’s more to prevent the avocado from browning if not consumed immediately.

Ingredients

  • 16 cherry tomatoes
  • 1/2 red onion
  • 1 lime
  • 2 avocados (ripe)
  • 2 pinches salt
  • to taste pepper
  • to taste extra virgin olive oil
  • to taste black sesame
  • 4 slices rustic bread

Steps

  • To prepare the avocado toast, wash and dry the cherry tomatoes and cut each into four wedges. Set aside.

    Peel the onion and slice it finely. Set aside.

  • In a bowl, put a tablespoon of lime juice.

    Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Put it in the bowl with the lime juice. Mash the avocado flesh with a fork to break it down. I like to have some chunks left, but if you prefer, you can also make it into a puree.

    Add two pinches of salt, pepper to taste, and a drizzle of extra virgin olive oil. Mix everything well.

  • Heat a pan and brush the slices of rustic bread with extra virgin olive oil. Toast the bread slices in the pan over high heat, for about 1 minute per side.

    Place the toasted bread slices on two plates and spread the avocado mixture on each. Then add the tomato wedges, red onion rings, and black sesame to taste.

    Serve your avocado toast accompanied by a wedge of lime, so that those who like it can further season the toast.
