- 3 cloves garlic
- 2 tbsps mustard
- 2 1/2 tbsps honey
- 1 1/2 tbsps lemon juice
- 1/2 tsp ground turmeric
- 1/2 tsp salt
- 1/2 tbsp extra virgin olive oil
- 1/4 cup toasted salted pistachios
- 1 tbsp chopped parsley
- 1/2 tsp lemon zest (grated)
- 1/2 tsp oregano (fresh, chopped)

Steps
To prepare the baked trout fillets with pistachios, rinse the trout fillets under cold water, then place them on a cutting board and pat them dry with paper towels. Remove any remaining bones.
Preheat the oven to 350°F (static) and line a baking sheet with parchment paper. Place the trout fillets on the baking sheet, skin side down.
Peel and finely chop the garlic and place it in a small bowl. Add the mustard, honey, lemon juice, ground turmeric, salt, and extra virgin olive oil. Mix well to create an emulsion. Generously brush it over the trout fillets and bake at 350°F for 15-18 minutes, until they flake easily with a fork and the edges are golden.
Meanwhile, chop the pistachios and place them in a small bowl. Add the chopped parsley and oregano, as well as the grated lemon zest. Finally, add 5-6 tablespoons of oil, until creating a sauce that is not too liquid.
Remove your baked trout fillets from the oven as soon as they are cooked, top them with the pistachio sauce, and serve immediately. Accompany with some lemon slices if someone wants to add more.
