Rich in vitamins, minerals, and fiber, Bircher Muesli is an excellent ally for a nutritious and delicious breakfast. Created by Maximilian Oskar Bircher Benner, a Swiss doctor, over 150 years ago, this muesli is now known and appreciated worldwide for its nutrient-rich composition. Bircher Muesli is indeed suitable even for those following a low-calorie diet and is a food with a high satiety index. Moreover, even if consumed every day, it never becomes boring, as it can be customized by varying the addition of fresh and dried fruits according to personal taste and the season.

One of the main elements of Bircher Muesli is apples, in my case the organic Royal Gala apples from Mela Val Venosta, which I grate with their beautiful red skin and which, along with honey, give a touch of sweetness to the recipe.

Ingredients

  • 1/2 cup instant oats (soluble)
  • 1/2 cup milk
  • 2 tbsps lemon juice
  • 2 tsps honey
  • 1 tbsp almonds
  • 1 tbsp sunflower seeds
  • 1 organic Royal Gala apple (Mela Val Venosta)
  • 1 tbsp raisins

Steps

  • To prepare Bircher Muesli, place the oats in a small bowl, add the milk, one tablespoon of lemon juice, and the honey. Mix well to combine all the ingredients and refrigerate for at least 4 hours, preferably overnight.

  • Before serving the Bircher Muesli, toast the almonds and sunflower seeds in a pan without adding oil or fats. Toast for about a couple of minutes, stirring the pan often to avoid burning. Remove from heat and set aside, or if preferred, coarsely chop the almonds.

    Put a tablespoon of lemon juice in a shallow dish and grate half of the washed Gala Bio Val Venosta apple into it. Mix immediately to prevent the apple from browning.

    Then add the grated apple to the oats and milk mixture and stir. Also, add the toasted almonds and sunflower seeds, keeping some aside for decoration, as well as the raisins. Mix again.

  • Cut the remaining Gala Bio Val Venosta apple into matchsticks.

    Finally, decorate your Bircher Muesli with toasted almonds and sunflower seeds, as well as the sliced Gala Bio Val Venosta apple, and serve.

Suggestions

According to your taste, you can add more or less honey. As for almonds and sunflower seeds, you can substitute or alternate them with walnuts, hazelnuts, cashews, or pistachios.

To vary your Bircher Muesli, besides the apple, you can add other seasonal fruits, such as strawberries, raspberries, apricots, or Val Venosta cherries.

To prepare lactose-free Bircher Muesli, use almond milk or oat milk instead of cow’s milk.
