Blueberry Dutch Baby Pancake

Beautifully puffy, with lots of juicy blueberries, here is the Blueberry Dutch Baby Pancake, the pancake whose batter is prepared in the blender by simply blending all the ingredients and then baking in the oven. It’s perfect for a delicious snack or even for Sunday breakfast, as it is prepared quickly.

If you prefer, you can also substitute the blueberries with other fruits, such as blackberries, red currants, or raspberries. Once cooked, add a sprinkle of powdered sugar and serve. If you want to make it even more complete, serve the Dutch Baby with some vanilla yogurt, whipped cream, or even a scoop of ice cream, which creates an interesting and delicious hot-cold contrast.

Ingredients

  • 0.5 oz butter
  • 3 eggs
  • 2/3 cup milk
  • 1/2 cup flour
  • 1/2 tsp salt
  • 3 tbsp elderflower sugar (alternatively regular sugar)
  • 1 lemon (zest)
  • as needed butter (for the pans)
  • 3/4 cup blueberries
  • as needed powdered sugar
  • as needed yogurt (optional)

Steps

  • To prepare the Dutch baby with blueberries, preheat the oven to 392°F (static).

    Wash the blueberries and let them drain.

    Melt the butter and set aside.
    Place the eggs, milk, flour, salt, sugar, and the grated zest of the previously washed lemon in the blender. Blend just until you get a smooth, lump-free mixture. Add the melted butter and blend for a few more seconds.

  • Prepare two oven-safe pans or baking dishes, each about 5.5 inches in diameter. Place 0.5 oz of butter in each, then put them in the oven for a couple of minutes to melt the butter.

    Once the butter has melted, pour the batter into the pans, then distribute the blueberries on the surface of each (they will sink, that’s okay).

    Bake at 392°F for about 20 minutes, until they are puffy and golden. Do not open the oven during cooking, or the pancakes will deflate.

  • Remove your Dutch babies from the oven, sprinkle with powdered sugar, and serve immediately. If desired, you can accompany them with yogurt or whipped cream.
