The Bonita Bio apple mousse is a fresh and delicate spoon dessert, made using apples with their skins, in this case, the Bonita Bio apples from Val Venosta, which give the mousse a delicate orange color. To make it even smoother, you can also sieve the apple puree obtained after cooking to remove any leftover skin pieces, but in my opinion, it’s not necessary.
For me, mousses are a great ally when I have guests because they can be prepared the day before without any problem.

Ingredients
- 1.3 lbs Bonita Bio apples (Val Venosta Apple)
- 3.4 tbsp lemon juice
- 3.2 tbsp sugar
- 1/2 vanilla bean
- 3 sheets gelatin sheets (3 sheets)
- 1 cup heavy cream
- 1 Bonita Bio apple (Val Venosta Apple)
- 8 leaves mint
- 2 tbsp lemon juice
Steps
To prepare the Bonita Bio apple mousse, wash the apples, remove the core, and cut them into cubes without peeling. Put the apple cubes in a saucepan and add the lemon juice, sugar, and seeds from half a vanilla bean.
Stir and put on the stove. Let it cook over medium-high heat, covered, for about 12 minutes, stirring occasionally, until the apples are softened.
Meanwhile, soak the gelatin sheets in cold water.
When the apples are cooked, remove them from the heat and puree with an immersion blender. Add the squeezed gelatin sheets and stir until they are melted.
Place the saucepan in the fridge for about 30 minutes until the mixture begins to gel.
Meanwhile, whip the cream and keep it in the fridge.
When the apple puree and gelatin begin to gel, stir it, then pour it into the bowl with the whipped cream. Gently fold it in with upward movements. Cover with plastic wrap and refrigerate for at least 2 hours.
Wash the last Bonita Bio apple, remove the core, and cut it into very small cubes, about 1/5″ x 1/5″. Place in a small bowl. Wash the mint leaves and cut them into strips. Add them to the apple cubes along with the lemon juice and stir.
Place about 2 tablespoons of flavored apple cubes at the bottom of the glasses or cups, then add the Bonita apple mousse. Decorate with additional apple cubes and a few mint leaves and serve.
Suggestions
If you want an even smoother mousse, you can sieve the apple puree before adding the gelatin sheets, thus removing any pieces of skin.
