Chestnut waffles are a fall and aromatic variation of the classic Belgian waffles, served with whipped cream and dark chocolate shavings.
The batter is made with boiled and mashed chestnuts, giving them a unique softness and unmistakable aroma. Preparing the batter is very easy, and once ready, it rests for just those ten minutes it takes for the waffle iron to heat up.
If you don’t have a waffle iron, you can also cook them by spoonfuls in a pan, browning them on both sides. In that case, they won’t have the classic waffle look, but more like a pancake, but the taste will still be the same.

Ingredients
- 1.75 cups all-purpose flour
- 2 teaspoons baking powder
- 4.4 oz chestnuts, boiled
- 0.75 cup milk
- 5.3 oz mascarpone
- 0.5 cup sugar
- 2 pinches salt
- 1 teaspoon ground cinnamon
- 3 eggs
- 5 tablespoons butter (melted)
- to taste whipped cream
- to taste dark chocolate (shaved)
Steps
To prepare the chestnut waffles, mix the flour with the baking powder and set aside.
Blend the boiled chestnuts with the milk until creamy and set aside.
In a bowl, whip the mascarpone with the sugar, salt, and cinnamon until creamy and smooth. Add the eggs, one at a time, continuing to mix with the whisk.
Then add the flour and baking powder mix and the chestnut and milk cream, blending everything well.
Finally, pour in the melted butter and mix with the whisk until smooth. Cover with plastic wrap and let rest for 10 minutes while the waffle iron heats up.
Heat the waffle iron, and when it’s hot, add the batter, measuring about one ladle per waffle. Close the waffle iron and let it cook for about 3 minutes until golden. Remove the chestnut waffles from the iron and place them on a rack, without stacking, keeping them warm if possible.
Proceed the same way until the batter is finished.
Serve your chestnut waffles with whipped cream and chocolate shavings.
