Chocolate and Cherry Bundt Cake

The chocolate and cherry bundt cake is a flavor explosion that combines the intense taste of dark chocolate with juicy cherries. If desired, this cake can also be made with milk chocolate or a combination of milk and dark chocolate. It’s great for breakfast or a snack, but it’s also perfect as a Sunday dessert.

Ingredients

  • 5.6 oz butter
  • 3.5 oz dark chocolate
  • 4.2 oz sugar
  • 1 tbsp vanilla sugar
  • 1 lb cherries
  • 1.4 cups flour
  • 2.5 oz potato starch
  • 0.9 oz unsweetened cocoa powder
  • 1 packet baking powder
  • 5 eggs
  • 0.6 cup milk
  • 3.5 oz dark chocolate chips
  • 7 oz dark chocolate

Steps

  • To prepare the chocolate and cherry bundt cake, put the butter in pieces in a saucepan along with the dark chocolate, sugar, and vanilla sugar. Melt over low heat, stirring occasionally. Then let it cool or at least warm.

    Meanwhile, wash and pit the cherries.

    Mix the flour with the potato starch, unsweetened cocoa powder, and baking powder, add a tablespoon to the pitted cherries and mix. Set aside the rest.

    Preheat the oven to 350°F (static).

  • Pour the butter and chocolate mixture into the bowl of the stand mixer, turn it on, and add 5 egg yolks, setting aside the whites for later.

    When you have a homogeneous mixture, add half of the sifted flour and starch mix and half of the milk. Work briefly with the whisks, then add the remaining flour and milk. Work just long enough to obtain a homogeneous mixture.

  • Beat the egg whites until stiff and gently incorporate them along with the cherries.

    Transfer everything to a greased and floured bundt pan and bake at 350°F for about 50-55 minutes. Do the toothpick test.

    Remove your chocolate and cherry bundt cake from the oven, let it cool for about 15 minutes, and gently remove it from the pan. Let it cool on a wire rack.

    Melt the dark chocolate for the glaze, pour it over the cooled bundt cake, and serve.
