The cocoa and cherry cake is made without butter, but with seed oil. It’s a very soft cake and is extremely easy to make. The cherries make it juicy, and the chocolate makes it even more delicious. If you don’t have cherries, you can also use other fruits, such as apricots, peaches, or raspberries.
It’s the perfect cake when you don’t have butter at home, or even when you forget to take the butter out of the fridge to soften it for a dessert. If you then replace the milk with plant-based milk, such as almond milk, you will get a lactose-free cake.
This simple cake is particularly liked by children and is therefore also ideal for picnics or parties.

Ingredients
- 3 eggs
- 8.5 oz sugar
- 2 cups flour
- 1/3 cup unsweetened cocoa powder
- 1 tbsp vanilla sugar
- 3 tsp baking powder
- 7 oz seed oil
- 1 cup milk
- 1 pinch salt
- 1 tbsp grappa (optional)
- 1.5 lbs cherries
- 7 oz dark chocolate
Steps
To make the cocoa and cherry cake, wash and pit the cherries, cut them in half, and set them aside.
Preheat the oven to 350 degrees (conventional).
Oil and flour a baking tray (those classic ones that come with the oven).
Beat the eggs together with the sugar and vanilla sugar until they are light and fluffy. Add the oil in a stream, continuing to work the mixture with the electric beaters.
Mix the flour, unsweetened cocoa, baking powder, and salt, and add half to the egg mixture, along with half the milk. Work with the beaters on low speed until there are no visible traces of flour. Add the remaining flour mix and milk, as well as the grappa (if using), and work just until a homogeneous mixture is obtained.
Pour everything onto the tray and spread evenly. Then distribute the cherries over the entire surface.
Bake the cocoa and cherry cake at 350 degrees for about 20 minutes. Do the toothpick test.
Remove from the oven and let cool.
In the meantime, coarsely chop the dark chocolate and melt it in a double boiler or microwave, without overheating it!!Decorate the cake with the melted chocolate, let it dry a bit and serve your cocoa and cherry cake cut into squares.

This cake can be made with many types of fruit, such as apricots, plums, raspberries, strawberries, peaches, etc.
If you wish, you can also make it without cocoa; in that case, you can simply replace the cocoa with the same amount of flour.
